Goat’s Milk or Cow’s Milk?
In South Africa, milk is part of daily life. It’s in your morning cuppa, poured over pap before school, and present in yoghurt, cheese, and butter at each meal through the day. For most of us, cow’s milk is the default. It’s familiar, reliable, and widely available.
On a global scale, goat’s milk is actually the most widely-used dairy, so why is it so foreign to most South Africans? And how different is it really to cow’s milk?
The short answer: nutritionally, goat’s milk and cow’s milk have a lot in common, while also interacting quite differently inside your gut. When you consider the longer answer – proteins, fats, digestion and taste – the differences start to tell an interesting story.
First Things First: What They Have in Common
Let’s start with the basics. From a nutritional point of view, both goat’s and cow’s milk are doing solid work.
They both provide:
- High-quality protein with all essential amino acids
- Naturally occurring milk fat
- Lactose, the natural sugar in milk
- Calcium and phosphorus for bones and teeth
- Naturally occurring vitamins such as vitamin A and B-complex vitamins
In other words, neither milk is “nutritionally inferior.” Both are whole foods that have supported human diets for generations. In whole form as drinking milk, or given more time on your shelf as maas, yoghurt, kefir, butter, or cheese, it’s a hard-working part of a nutritionally balanced diets.
Where the Differences Begin: It’s All in the Structure
The real differences between goat’s milk and cow’s milk aren’t simply about headline nutrients like “protein” or “fat,” but about how those nutrients are packaged.
Protein: Same Amount, Different Behaviour
One of the most studied differences lies in the type of protein found in each milk. Both contain about 3 – 3,2% protein. However, this is made up of different types:
- Cow’s milk contains relatively high levels of αs1-casein, a protein that forms firm curds during digestion.
- Goat’s milk contains predominantly αs2-casein, which tends to form softer, looser curds, which may be broken down more easily during digestion
This is one reason some people say goat’s milk “feels lighter” or “sits better” than comparison cow’s milk products.
Science backs this up: multiple studies show that goat’s milk proteins behave differently in the digestive system compared with cow’s milk.
Fat: Small Details, Big Impact
Milk fat is another area where goat’s milk quietly does things its own way.
- Smaller fat globules: Goat’s milk fat globules are naturally smaller and stay evenly dispersed without needing homogenisation.
- Higher proportion of medium-chain fatty acids: These fats are metabolised more quickly and are used readily as an energy source.
- Support healthy cholesterol levels: there is a lot of research that shows the complex ways that goat’s milk actually supports healthy cholesterol levels. Think heart and brain-healthy ‘Mediterranean Diet’ – goat’s milk fits right in!
Many people have a specific taste in mind when they consider goat’s milk, and this is caused by the the fatty acids – capric and caprylic acids in particular. This is why many people will tell you that our goat’s milk products are ‘mild-tasting’.
What About Lactose?
There’s a common belief that goat’s milk is “lactose-free.” It isn’t, but it does contain about 1% less lactose than cow’s milk.
For people with lactose sensitivity, that small reduction (combined with differences in fat and protein digestion) may help explain why goat’s milk sometimes feels easier to tolerate. Processed dairy products contain much less lactose. If you find lactose problematic, it is a good idea to start your journey into real alt milk with goat’s milk cheeses and yoghurt, instead of whole milk.
Minerals and Absorption
Both milks are excellent sources of calcium and phosphorus, but research suggests that minerals in goat’s milk, such as calcium, zinc and selenium, may be more bioavailable, meaning the body can absorb and use them efficiently.
Digestion, Sensitivity and the Human Factor
Scientific studies show that goat’s milk:
- Forms softer curds in the stomach
- May empty from the stomach more quickly
- Can alter fat digestion patterns
For some people, this translates into less bloating or discomfort. For others, there’s no noticeable difference at all.
One important caveat: goat’s milk is not suitable for people with a diagnosed cow’s milk protein allergy, as cross-reactivity between milk proteins is common.
So… Which One Is Better?
That’s the wrong question.
Cow’s milk remains a cornerstone of South African diets and dairy farming, supporting thousands of farmers and providing accessible nutrition across the country. Goat’s milk, meanwhile, offers an alternative with a different protein and fat structure – one that may suit certain people better and adds welcome diversity to the dairy landscape.
They’re not rivals. They’re variations on a theme.
And like most good food choices, the best option is the one that:
- Works with your body
- Fits your taste preferences
- Aligns with how you eat and live
Sometimes that’s cow’s milk in your tea. Sometimes it’s goat’s milk yoghurt at breakfast. Usually it means adding goat’s milk cheese to your platter board (it’s not just good for you…it looks good too!).
